New Pies – Wark Farm and Glen Tanar Collaboration

Wark Farm is a 200 acre certified organic farm in the foothills of the eastern edge of the Cairngorm mountain range. Sitting at about 1,000ft, it is home to a pedigree breeding herd of Belted Galloway cattle and flocks of pure bred pedigree Hebridean sheep and Hebridean sheep crossed with Meatlinc tups. High quality meat with a signature taste of wildflower terroir combined with the highest level of craft butchery led to a Royal Warrant and an exceptional customer base such as Fife Arms and Douneside Hotel. Their sense of quality and love for nature is reflected in their range of pies, which are all fully made at the farm, including their golden hot water pastry and a filling made with locally sourced ingredients. The pies live up to their credo of ‘Taste Scotland’s Wild Richness’.

Within this philosophy, their choice to collaborate with Glentanar Estate was an easy decision as Laurel from Wark Farms says. ‘Our decision to collaborate with Glen Tanar was easy one because, just like for us, sustainability and a commitment to preserving Scotland’s natural beauty are top priorities for them.’

Glen Tanar is set in Scotland’s spectacular Cairngorms National Park in Royal Deeside and provides the perfect base for exploring the outdoors. From rugged heather moorland to towering Caledonian pine forests, from the winding River Tanar to the majestic waters of the River Dee, this working Highland estate has been responsibly cared for by four generations of the Coats family since 1905. The beautiful glen is the perfect backdrop for weddings and Highland holidays ranging from hill walking and salmon fishing to wildlife watching.

Working with the sustainably sourced venison of Glentanar Estate, Wark Farm saw their Venison & Juniper pies rapidly evolve from a seasonal special to a part of their fixed pie range,because of popular demand. Especially for the festivities, Wark Farm now offers a new seasonal special, where the Glentanar venison is enriched with a hint of sweetness of figs, lending it a beautiful extra texture. Wark Farm is now taking orders of their foodservice customers for their new pie.
